Yummy Cous Cous Salad

I've just made the yummiest cous cous salad I have ever tried, all thanks to the beautiful recipe book from my sister-in-law; 'made in morocco'.
This version of cous cous salad comes with chickpeas and goat's cheese, and is just loaded with flavour:

Ingredients:
1/4 cup olive oil
1 large onion, peeled and chopped
2 cloves garlic, crushed
1 teaspoon tumeric
1/2 teaspoon cinnamon (I'd run out and used cardamon instead, which was delicious)
1+1/2 cups of vegetable stock
1+1/2 cups instant cous cous
420g can chickpeas, rinsed and drained
150g goat's cheese, crumbled
2 red peppers
